Grecian Spaghetti Squash


Spaghetti squash with a Feta Cheese cream sauce?  Sounds Greek to me!
     This spaghetti squash recipe has the same basic ingredients you may find in a Greek Salad.  Except for the lettuce of course.
     Recipe:  Bake a whole small spaghetti squash for thirty minutes in a 350 degree oven.  Let the squash cool.  Cut the squash in half.  (Do not cut the squash lengthwise.)  Scoop out the pulp and seeds from the center without disturbing the spaghetti squash meat.  Loosen and pull the long strands of "spaghetti" from the squash with a fork.  Set the spaghetti squash strands aside.
     Heat a saute pan over medium heat.
     Add a splash of olive oil.
     Add 2 cloves of chopped garlic.
     Saute till the garlic turns a golden color.
     Add a small handful each of these diced vegetables:  green bell pepper, red bell pepper, onion and tomato.
     Add about 6 to 8 black olives that are cut in half.
     Add 4 to 5 pitted kalamata olives.
     Saute till the vegetables start to become tender. 
     Add a squeeze of lemon juice.
     Add a pinch of fennel seed.
     Add a pinch of ground star anise
     Add 2 pinches of dill weed.
     Add 2 pinches of chopped Italian parsley.
     Add sea salt and black pepper.
     Add 2 pinches of oregano.
     Add about 3/4 cup of cream. 
     When the cream start to get hot, add a handful of crumbled feta cheese. 
     Stir till the cheese melts into the sauce. 
     Add a pasta size portion of the reserved spaghetti squash.  (A couple of handfuls is plenty.)
     Toss and heat the ingredients together.
     Set the Greek styled spaghetti squash on a plate. 
     Sprinkle a little bit of crumbled feta cheese on top of the hot spaghetti squash. 
     Garnish with parsley sprigs.
     Delicious, light, healthy and Greek!  By only baking the spaghetti squash for 30 minutes, the squash will be perfectly al dente and crisp.  The spaghetti squash strands will remain thin, when using a short baking time.  After heating the squash with the cream, the squash will have a texture like al dente spaghetti.  The unmistakable feta cheese flavor with lemon, olive oil, garlic and olives gives this spaghetti squash recipe a classic, enjoyable flavor.  Yum!  ...  Shawna
