Shrimp and Avocado Tostada with Black Bean Salsa




This is a nice modern style tostada!  The flavors of seasoned shrimp with avocado and black bean salsa go so well together! 
     Black Bean Salsa Recipe:  Mix some rinsed, cooked, chilled black beans with a little bit of fine chopped jalapeno in a mixing bowl.  Add a little bit each of these ingredients:  chopped tomato, diced pimiento, chopped green onion and chopped cilantro.  Add a splash of rice vinegar, sea salt, black pepper and a squeeze of lime juice.  Mix the ingredients together  
     Shrimp:  Saute peeled shrimp with olive oil and minced garlic in a saute pan over medium high heat.  Add sea salt, black pepper, a few pinches of mild chili powder, a pinch of cumin and a squeeze of lime juice.  Saute till the shrimp become fully cooked and then set the shrimp aside. 
     Tostada:  Grill a flour tortilla in a saute pan with oil over medium heat.  Grill the tortilla on both sides till it becomes crisp.  Spread a thin layer of warm refried beans over the top of the tortilla.  Sprinkle some grated Jack Cheese and Cheddar Cheese over the refried beans.  Place the tostada on a baking pan.  Bake in a 350 degree oven till the cheese is melted.  (Do not brown the cheese!) 
     Set the tostada on a plate.  Sprinkle diced fresh tomato over the cheese.  Lay thin avocado slices around the tostada.  Pile a little shredded lettuce in the middle of the tostada.  Set the shrimp upright around the tostada.  Spoon the black bean salsa around the lettuce.  Set a dollop of sour cream on the lettuce in the middle of the tostada.  Sprinkle sliced green onion on the sour cream.  
     This actually is a very light and fresh tasting tostada.  It is healthy too.  The flavors of the shrimp, cheese, avocado and the black bean salsa are so nice!  Yum!  ...  Shawna
