Hearts of Romaine Lettuce with Balsamic Lemon Dill Dressing


Recipe:  Trim and wash a head of romaine.  Cut it in half lengthwise.  Split the romaine half lengthwise into two wedges and place them on a plate. 
     Garnish with thin plum tomato slices, mushroom slices, lemon slices, dill sprigs and boiled egg halves. 
     Balsamic Lemon Dill dressing Recipe:  Mix a dab of mayonnaise, a small squeeze of lemon juice, coarse ground black pepper, sea salt, a dash of balsamic vinegar, a little bit of minced garlic and fresh chopped dill.  Add a little water if the dressing is not thin enough.  (Don't use too much balsamic vinegar or it will take over the flavor of the dressing.)  Drizzle the dressing over the romaine quarters. 
     This is a very nice and delicious salad.  Use lots of chopped dill in the dressing for effect and flavor.  Yum!  ...  Shawna
