Sweet Sour Spaghetti Squash Salad



This salad is so refreshing!  Tangy sweet and very light.  The spaghetti squash must be cooked al dente and have a crisp texture to make this recipe correctly.
     Salad Recipe:  Bake a small, whole spaghetti squash in a 350 degree oven for 30 minutes. 
     Let the squash cool. 
     Cut the spaghetti squash in half.  (Do not cut in half lengthwise or the squash strands will pull out in short lengths instead of long spaghetti strands.)
     Use a spoon to scrape the seeds and inner pulp out of the squash without disturbing the thick "Spaghetti strand" layer. 
     Use a fork to loosen and  pull long strands of spaghetti squash out of the shell. 
     Place a salad size portion of the squash's spaghetti strands into a mixing bowl.  (2 handfuls is plenty.)
     Add a small handful of diced onion.
     Add a small handful of diced green bell pepper.
     Add a small handful of diced red bell pepper.
     Add a thin sliced green onion. 
     Add about 10 leaves of chopped cilantro. 
     Sweet Sour Salad Dressing Recipe:  Boil 2 cups of water in a sauce pot over high heat.
     Add a generous handful of sugar.
     Add a splash of apple cider vinegar. 
     Taste the thin liquid.  The flavor should be a balance of sweet and sour flavors.
     Reduce the sweet sour liquid till a light, sweet sour syrup is formed. 
     Remove the sweet sour syrup from the heat and allow it to cool down.
     Add the sweet sour dressing syrup to the salad in the mixing bowl. 
     Add a small splash of vegetable oil.
     Add a small squeeze of lemon juice.
     Add sea salt and white pepper. 
     Toss the salad gently. 
     Chill the salad till it becomes cool.
     Assembly:  Place a large piece of romaine lettuce on a plate. 
     Place long thin peeled cucumber slices around the border of the lettuce. 
     Mound the spaghetti squash salad on the lettuce leaf. 
     Garnish with a cilantro sprig.
     Light, refreshing and very tasty!  The light sweet sour flavored spaghetti squash is a great refreshing summer treat.  Baking the spaghetti squash for only a half a hour guarantees light thin strands of spaghetti squash and crunchy fresh texture.  This healthy salad is ver refreshing and yummy!  ...  Shawna
