Dijon Breaded Frog Legs with Dill Slaw


Dill Slaw Recipe:  Shave some thin sliced cabbage.  Place it in a mixing bowl. 
     Add a little bit each of:  chopped green bell pepper and match stick cut carrots.
     Add sea salt and black pepper.
     Add a little bit of chopped fresh dill.
     Add a little bit of sugar.
     Add a splash of rice vinegar.
     Add a little bit of mayonnaise. 
     Mix the slaw together and let chill for 15 minutes before serving. 
     Dijon Breaded Frog Legs:  Mix a dollop of Dijon Mustard, a little bit of chopped tarragon, sea salt, black pepper and 2 whisked eggs together in a mixing bowl. 
     Dredge the frog legs in flour.
     Dip the frog legs in the dijon mustard egg batter.    
     Dredge the frog legs in bread crumbs. 
     Fry the frog legs in 350 degree oil till they become fully cooked and they become a light brown color. 
     Drain the excess grease off of the frog legs on a towel. 
     Place a piece of lettuce on a plate. 
     Make a little pile of dill slaw on the plate. 
     Canter the frog legs against the dill cole slaw. 
     Garnish with fresh dill sprigs and lemon slices. 
     These frog legs need no sauce at all.  The Dijon Mustard aroma and flavor is so very nice!  The dill slaw compliments the flavor of the frog legs.  This is a very nice appetizer or light dinner!  Yum!  ...    Shawna
