Fried Tofu, Vegetables and Lucky Fuzhou Noodles with Egg Sauce


This is a healthy and delicious recipe! 
     Fried Tofu:  Cut 2 thick square slices of firm tofu. 
     Cut the square tofu pieces into triangle shapes. 
     Dredge the tofu triangles in flour. 
     Dip the tofu in egg wash. 
     Heat a saute pan over medium high heat.
     Add a generous splash of vegetable oil.
     Saute the egg dipped tofu on both sides, till they become a golden brown color. 
     Remove the fried tofu from the pan and set it aside.
     Recipe:  Keep some water boiling to cook the fuzhou noodles with later in the recipe. 
     Drain any excess oil from the tofu frying pan, but leave about  tablespoon of oil in the pan.
     Leave the saute pan on medium high heat.
     Add a small splash of sesame oil to the hot oil that remains in the pan.
     Add 1 teaspoon of minced ginger.
     Add 1 minced garlic clove.
     Add a small handful of each of these vegetables: 
     - sliced celery
     - large green onion pieces
     - sliced mushrooms
     - large diced red bell pepper
     - large diced green bell pepper
     - chopped cabbage
     - sliced onion
     - small broccoli florets
     - asparagus tips.
     Stir fry the vegetables lightly.
     Add sea salt and white pepper.
     Add 2 pinches of five spice powder.
     Add a small splash of soy sauce.
     Add anout 1 1/3 cups of chicken stock.
     Bring the chicken broth to a boil.
     Add a pinch of turmeric for color.
     Mix a few spoonfuls of cornstarch with cold water to form a slurry.
     Add a little bit corn starch and water slurry at a time, while stirring, to thicken the sauce to a medium thin consistency.
     Push the vegetables to one side of the pan.
     Slowly pour 1 whisked egg into the exposed sauce forming long thin ribbons of egg.
     Toss the sauce and vegetables together in the pan.
     Remove the pan from the heat.
     Drop a portion of Fuzhou Noodles into boiling water.  (The thin Fuzhou noodles cook in just seconds.)
     Drain the water off of the noodles.
     Add a small splash of sesame oil to the noodles. 
     Stir the oil into the noodles to keep them from sticking together.
     Assembly:  Mound the fuzhou noodles on the middle of a plate.
     Spoon the vegetables and egg sauce around the noodles, but leave a little bit of the sauce in the pan.
     Set the pan with the little bit of sauce in it back on the heat. 
     Add the fried tofu triangles. 
     Reheat the fried tofu pieces in the sauce and then set the tofu triangles on top of the vegetables around the fuzhou noodles.
     This entree is healthy and very mild in flavor.  The noodles have a slight lye flavor from the traditional Fuzhou noodle making process.  The sauce is mild and the egg aroma is very nice.  The egg battered tofu is delightful to eat!  Fuzhou Noodles are known as Lucky Noodles in China.  Try this recipe for a change of luck!  ...  Shawna
