Winter Melon Soup with Chicken and Cilantro

Winter Melon Soup is so refreshing!
     Winter melon is a great diet food for those who are calorie conscious.  This soup has such a light flavor and the winter melon is so delicate when cooked.  Cilantro really adds a flavor boost to this soup.
     Recipe:  Boil enough light chicken broth to make a large bowl of soup with in a sauce pot over high heat. 
     Add a small spoonful of thin sliced shallot.
     Add a small dab of minced ginger. 
     Add sea salt and white pepper. 
     Add about 1 ounce of small thin sliced chicken pieces. 
     Remove the rind, seeds and soft pulp from a small section of winter melon.
     Cut the winter melon into 2 large handfuls of 3/4 inch cube shaped bite size pieces.
     Add the bite size cube shaped pieces of winter melon to the soup. 
     Return the soup to a gentle boil over medium high heat. 
     Lower the temperature to medium low heat.
     Simmer the soup, till the opaque pieces of winter melon turn translucent and clear. 
     Do not stir the soup or the tender winter melon pieces will break up! 
     Add about 10 cilantro leaves. 
     Pour the soup into a large soup bowl.
     Delicious!  The traditional Chinese broth for winter melon is chicken broth.  Chicken broth is the perfect flavor for winter melon.  Cilantro is a very nice complimentary herb for this soup.  This simple soup is a nice light summer meal. Winter melon is great diet food too!  ... Shawna
