Insalata di Toscana


Tuscany, Italy is another great food area.  Roasted red bell peppers, cannellini beans, pine nuts and a tomato vinaegrette makes this salad delicious.  This healthy salad is made in the style of Tuscany.
     Recipe:  Place a large handful of chopped romaine lettuce into a mixing bowl.
     Add a little bit of thin sliced onion.
     Add a small handful of thin sliced zucchini.
     Add a small handful of sliced roasted red bell pepper.
     Add a few whole fresh Italian flat parsley leaves.
     Add a small handful of rinsed cooked cannellini beans.
     Toss the ingredients together. 
     Place the salad mixture on a plate. 
     Tomato Vinaegrette Recipe:  Place a splash of virgin olive oil in a mixing bowl.
     Add a splash of red wine vinegar.
     Add sea salt and black pepper.
     Add a clove of chopped garlic.
     Add a pinch of oregano.
     Add a few small spoonfuls of Imported canned crushed Italian peeled plum tomato.
     Stir the ingredients together to make the dressing. 
     Salad:  Spoon the dressing over the salad on the plate. 
     Sprinkle some toasted pine nuts over the salad. 
     Sprinkle a little bit of grated hard boiled egg on the salad.
     This is an easy Italian tossed salad with the great flavor of a tomato vinaegrette.  The tomato flavor is there in every bite.  Cannellini beans are very pleasant when chilled in a salad.  The roasted red bell peppers are a real Toscana treat.  This is a great summer salad that is full of great flavor! ...  Shawna
