Honeydew Melon with Ginger Mint Yogurt


Simply delicious, healthy and refreshing!
     Chefs always think of ways to make something special.  A melon cup or fruit cup is a typical side dish for breakfast in many restaurants.  In cheap "Greasy Spoon" diners, the fruit cup may be made with canned fruit or fresh fruit.  At a refined restaurant, a fruit cup may be a tasty experience.  Yogurt and mint is popular in the middle east and it is a very refreshing combination.  Ginger is a common spice too.  Medicinally, ginger is one of the best ways to start a day.  Anti oxidant, blood circulatory aid and an anti cancer food.  Ginger has its benefits.
     Recipe:  Cut some peeled seeded ripe honeydew into bite size pieces.
     Place the honeydew pieces in a fruit cup or custard dish.
     Ginger Mint Yogurt Recipe:  Place a couple dollops of Greek goats milk yogurt into a small mixing bowl.
     Add a spoonful of honey.
     Add a few pinches of finely chopped fresh mint leaves.
     Add a small spoonful of very finely minced ginger.
     Mix the ingredients together.
     Spoon the yogurt mixture over the honeydew.
     Garnish with fresh mint sprigs.
     The zesty bite of ginger is present, while the mint flavor refreshes.  The touch of honey sweetens the yogurt slightly.  Greek yogurt has much more flavor than standard yogurt.  This simple fruit cup is pretty to look at!  This recipe has a thick yogurt texture.  This fruit cup is a healthy way to start a day! ...  Shawna
