Grilled Denver Egg Sandwich with Purple Potato Home Fries



Yummy breakfast! 
     A Denver omelette and a western omelette are almost the same thing.  A Denver omelette has cheese and the western omelette does not.  The Denver omelette's ingredients are perfect for a great egg breakfast sandwich. 
     Purple Potato Home Fry Recipe:  Boil a few purple Peru potatoes till they are still firm and 3/4's cooked.  (Leave the skin on the potatoes.) 
     Slice the potatoes and saute them with unsalted butter in a saute pan over medium heat. 
     Add a little bit of sliced onion.
     Add a little bit of chopped red bell pepper.
     Add sea salt and black pepper.
     Add a pinch of cayenne pepper. 
     Cook the potatoes till they are lightly caramelized. 
     Set the potatoes aside and keep them warm.
     Denver Egg Sandwich Recipe:  Brush one side each of two slices of rye bread with unsalted butter.
     Place a few thin slices of swiss cheese on the bread slices.
     Heat a non stick saute pan over medium heat.
     Add a couple pats of unsalted butter.
     Add a small handful each of chopped ham, green bell pepper, red bell pepper and onion.
     Saute till the vegetables become tender.
     Add a whisked egg. 
     Saute till the egg mixture becomes fully cooked.
     Set the Denver egg mixture on one of the slices of bread with the cheese on it. 
     Set the buttered sandwich halves in a skillet over medium heat to grill and toast the bread. 
     Place the two grilled bread slices together to form a sandwich. 
     Slice the sandwich in half and set it on a plate.
     Place the purple potato home fries on the plate and garnish with flat parsley sprigs.
     This is a nice change from the boring standard fried egg sandwich.  The flavor of the sandwich is classic American Diner breakfast cooking.  This is a very nice breakfast sandwich!  The purple potatoes are a nice colorful change from white potatoes.  Tasty!  ...  Shawna
