Egg, Bacon and White Asparagus on Toast with Buttermilk Sauce and Grilled Yams


     Grilled Yam Breakfast Potato:  Dice a small peeled yam into small cube pieces.
     Boil the diced yam with 2 cups of water for 3 minutes in a sauce pot over high heat.
     Drain the water off of the yams.
     Reduce the temperature to medium heat.
     Add 3 pats of unsalted butter.
     Add sea salt.
     Add 1 pinch of allspice.
     Grill and stir till the yam pieces, till they slightly caramelize.
     Keep the yam home fries warm over very low heat.
     Open Face Sandwich Recipe:  This recipe can be made in one large non stick saute pan. 
     Heat a non stick saute pan over medium heat.
     Grill 2 thin back bacon slices.
     Add 5 peeled white asparagus spear that are cut in half lengthwise.
     Place a thick slice of French bread that is brushed with unsalted butter in the pan.
     When the back bacon is cooked crisp, set it aside.
     When the French bread becomes toasted, set it aside.
     When the asparagus spears are cooked al dente, set them aside.
     Add 1 pat of unsalted butter to the pan.
     Add 1 whisked egg.
     Scramble the egg, till it becomes fully cooked.
     Place the toast slice on a plate.
     Set the scrambled egg on the toast.
     Set the back bacon sliced on the egg.
     Set the white asparagus spear halves on top of the back bacon slices.
     Buttermilk Sauce Recipe:  Leave the saute pan on medium heat.
     Wipe the hot non stick saute pan clean with a dry towel.
     Add a small splash of buttermilk.
     Allow the buttermilk to break.  (Break = Let the buttermilk separate into curd and water.  Little bits of butter curd will appear in the broken buttermilk.)
     Add sea salt and coarse ground black pepper.
     Add a small amount of a corn starch and water slurry. 
     Bring the sauce to a gentle boil.
     Remove the sauce from the heat and stir in a tiny splash of buttermilk to whiten the sauce.
     Spoon the buttermilk sauce over the open faced sandwich.
     Set the grilled yams on the plate. 
     This is a very nice breakfast to start the day!  The flavors are very old fashioned.  The tangy thin buttermilk sauce with curdled butter bits is a perfect compliment to the open faced sandwich.  Grilled home style yam is a nice breakfast accompaniment too.  Same old boring breakfast?  Breakfast is never boring in my blog!  ...   Shawna
