Avocado Salad with Cilantro Lime Dressing and Toasted Pine Nuts


This is a refreshing salad!  Lime, cilantro and avocado are a classic combination of flavors!
     Recipe:  Pan roast a small handful pine nuts in an oven or on the stove top in a dry pan over medium heat. 
     Shake the pan occasionally so the pine nuts toast evenly.
     Set the pine nuts aside after they are lightly toasted.
     Cilantro Lime Salad Dressing Recipe:  Place a large dollop of mayonnaise into a small mixing bowl.
     Add a tiny splash of virgin olive oil.
     Add about 15 leaves of minced fresh cilantro.
     Add a minced garlic clove.
     Add a generous squeeze of fresh lime juice.
     Add sea salt and black pepper.
     Mix the ingredients together. 
     The dressing's consistency should be pourable and smooth.  If the dressing is too thick but the flavors are correct, then just add a little bit of hot water while stirring to thin the dressing. 
     Refrigerate the dressing for ten minutes, so the flavors meld.
     Salad:  Place a mound of chopped romaine lettuce on the center of a plate. 
     Place a few peeled seeded cucumber sticks and plum tomato wedges around the mound of lettuce. 
     Cut a small avocado into slices.
     Place the avocado slices on top of the lettuce. 
     Spoon the dressing over the avocado and lettuce. 
     Sprinkle the toasted pine nuts on the dressing. 
     Garnish the salad with lime slices.
     Crisp light flavors of cilantro and lime meld with avocado in a satisfying, refreshing way!  The toasted pine nuts add crunch and a great flavor of their own.  This is a delicious simple summer salad! ... Shawna
