Alphabet Soup




     I saw a bag of alphabet pasta at the store and I could not resist!  This alphabet soup is almost like the canned version, but I used all fresh ingredients.
     Recipe:  Heat a sauce pot over medium high heat.
     Add enough vegetable broth for a large bowl of soup.
     Bring the broth to a boil.
     Add 1 tablespoon of chopped onion.
     Add a small handful of sliced celery.
     Add a small handful of diced carrot.
     Add 1/2 of a sliced green onion.
     Add a small handful of diced rutabaga.
     Add a few corn kernels.
     Add a few peas.
     Add a few pieces of diced potato.
     Add a few small green been pieces.
     Add a few lima beans.
     Add a fresh peeled and seeded plum tomato.
     Add sea salt and black pepper.
     Add a pinch of Herbes Du Provence. 
     Reduce the temperature to medium heat.
     Simmer the soup.
     Add a handful of dried uncooked alphabet shaped pasta.
     Cook and stir the soup, till the soup till the pasta is cooked al dente and the vegetables become tender.
     Ladle the soup into a soup bowl. 
     No garnish is necessary!
     Alphabet soup is fun healthy vegan food.  The flavor is rich with vegetables.  A mild depth of flavor comes from the herbs du provence.  This is one soup that gets the "OK" for people to play with their food!  Spell a few words.  Send soup messages.  Have fun with this alphabet soup!  ...  Shawna
