Almond Grape Roasted Chicken Salad


  
     This is a great tasting chicken salad! 
     Almond grape roasted chicken salad was customer favorite lunch entree that I served at a very nice cafe in Florida.  One taste and you will see why! 
     Almond Grape Roasted Chicken Salad Recipe:  Slow roast a whole chicken that is seasoned with sea salt and black pepper in a 325 degree oven, till it is fully cooked. 
     Let the roasted chicken cool to room temperature. 
     Remove the breast meat from the chicken and chill the breast meat in a refrigerator.  (We used to put the rest of the chicken in a stock pot or use it for another recipe.) 
     Dice the chicken breast meat into large bite size pieces. 
     Place the diced chicken into a mixing bowl. 
     Add 1 small handful of finely chopped onion.
     Add 1 small handful chopped celery.
     Add 1 chopped green onion.
     Add 2 pinches of chopped fresh dill weed.
     Add 2 pinches of chopped parsley.
     Add sea salt and black pepper.
     Add 1 small handful of toasted sliced almonds.
     Add 1 handful of red seedless grapes that are cut in half. 
     Add 1 heaping tablespoon of sour cream.
     Add 1 tablespoon of mayonnaise in a separate bowl. 
     Fold the sour cream and mayonnaise mixture into the chicken salad in the mixing bowl.  (Do not add too much of the sour cream and mayonnaise!  Just add enough to coat the ingredients.)
     Chill the chicken salad in a refrigerator for one hour, so the flavors meld. 
     Assembly:  Place some mixed baby lettuce on the center of a plate. 
     Garnish the lettuce with fine julienne carrot strips.
     Mound the chicken salad on the lettuce.
     Garnish the plate with peeled orange slices.
     Place a small bunch of red grapes on the plate.
     Place a few olive oil brushed French bread toast points on the plate. 
     This is an amazing tasting chicken salad!  It is so light tasting from the sliced grapes and sour cream.  The sliced almonds add crunch and a wonderful flavor.  The dill weed gives this salad a nice garden herb flavor.  This chicken salad is so much better than standard chicken salad recipes.  The flavor says it all!  Yum!  ...  Shawna
