The $1.00 Las Vegas Shrimp Cocktail

Yum!  I miss my home in Las Vegas so much.  When home sick, I cook Las Vegas food.  There are fantastic food values in Las Vegas.  One great value is the $1.00 Las Vegas Shrimp Cocktail.  This cocktail costs about a dollar to make, so the Las Vegas shrimp cocktail is usually a casino promotional menu item.
The Golden Gate Casino at Main Street and Fremont Street in down town Las Vegas introduced the first Las Vegas shrimp cocktail in 1959.  The Golden Gate was also the first casino in Las Vegas.  The Golden Gate has a wonderful antique 1929 charm.  Over 40 million shrimp coctails have been sold at the Golden Gate so far!
Recipe:  Boil some whole shrimp in water till they are fully cooked.
Cool the shrimp under cold running water.
     Peel and devein the shrimp.
     Remove the tails.
     Set the shrimp aside.
Cocktail Sauce Recipe:  Place 1/4 cup of ketchup in a mixing bowl.
Add a splash of chili sauce.  (Chile sauce is like ketchup in color and texture.)
Add a couple heaping spoonfuls of horse radish.
Add a small squeeze of fresh lemon juice.
Add a clove of minced garlic.
Add a small splash of worcestershire sauce.
Add a small splash of cayenne pepper hot sauce.
Stir the ingredients together to make the classic "Antoine's of New Orleans" original cocktail sauce.  (Antoine's is where cocktail sauce was invented.)
Assembly:  Place a small handful of chopped celery on the bottom of a cocktail glass.
Layer the shrimp and spoonfuls of cocktail sauce in the glass to the top.
Garnish with a lemon wedge and flat parsley sprigs.
Don't laugh, this is by far the best selling shrimp cocktail of all time!  The original cocktail sauce is easy to make and so much better than taboo pre made bottled cocktail sauce.  Any size shrimp can be used to make this Las Vegas Shrimp Cocktail.  Popcorn shrimp have been used in recent years too.
I miss Las Vegas, and I plan to move back home there no matter whether the economy is good or bad.  Las Vegas is the only place I am happy.  This Las Vegas Shrimp Cocktail cured my home sickness!  Yummy casino appetizer and snack!  Viva Las Vegas! ...  Shawna
