This is a very nice fall season pasta. The flavors of calabaza (Mexican Pumpkin) and roasted sweet Holland Peppers go so very well with the saffron cream. A hint of ginger and pepitas (toasted calabaza seed) really adds a nice touch. The calabaza shaped pasta has an interesting look to it. This pasta recipe is my own creation. I wanted to create a different kind of fall pumpkin pasta that did not have a curry spiced sauce like so many other chefs already offer. This recipe turned out fantastic!
Recipe: Brush a Yellow Holland Pepper with oil and roast it in a 325 degree oven till it shows a few brown high lights.
Cool the pepper under cold running water.
Peel the skin off of the pepper and remove the seeds.
Cut the pepper into thin julienne strips and set them aside.
Cut a thick wedge slice of calabaza or pumpkin.
Scoop the seeds off .
Cut the rind off of the pumpkin.
Slice the pumpkin meat into small cube shaped pieces.
Saute a little bit of minced onion and ginger with unsalted butter in a saute pan over medium heat.
Add the diced pumpkin.
Saute till the onions become lightly caramelized.
Add a splash of dry white wine.
Add a small squeeze of lemon juice.
Add some chicken broth.
Add sea salt, white pepper and a few pinches of saffron.
Stir and reduce over medium high heat.
Add some cream.
Reduce and stir till a thin medium bodied sauce is formed.
Add the roasted Holland Pepper strips.
Add some al dente cooked calabaza shaped pasta.
Toss the pasta and sauce together.
Place the pasta onto a plate.
Sprinkle some pepitas over the pasta.
Sprinkle some thin sliced green onion top on the pasta.
Garnish with an Italian parsley sprig.
The flavors are so delicate and elegant! I used Mexican Calabaza because it does have a richer pumpkin flavor. The sweet yellow Holland Peppers accent the pumpkin flavor. The saffron cream sauce is so very well matched with the pumpkin and peppers. The calabaza shaped pasta really picks the sauce up well. This is a nice Halloween or Thanksgiving holiday pasta! ...
